Notes from the Importer: The Cuvée Thomas is a blend of different Jacquère parcels, with vine age between 36 and 120 years. Grown to clay/limestone and blue silex soils. In the cellar, vinification happens with native yeasts. Aged on the lees in stainless steel tanks for 9 months before bottling. On the nose, there is a beautiful, soft aroma of freshly milled almond flour that floats above a foundation of yellow stone fruit. The palate is salty, like the best Jacquères are, with zingy apricot and an added nuance of herbaceous basil. A minerally wine at the beginning, it grows in weight, developing a savory and lengthy finish.
