Notes from the Importer: Denavolo is located in at the foot of the Apennines in Emilia-Romagna and is named for the mountain which it lays under. Giulio is a curious and pensive person – always asking questions which might not immediately have an answer. He’s forever looking to experiment, with different fermentation vessels, different grapes, working in different vineyards at different altitudes and with different people. He created Denavolo to house these answer-seeking experiments (aka wines).
Denavolo’s vineyards are planted with indigenous varietals including Malvasia di Candia Aromatica and Ortuga. The various parcels are located between 350m and 600m above sea level. They are farmed according to Organic and Biodynamic principles.
For the most part, Giulio separates his cuvees based on the altitude of the vineyard – the fruit for his ‘entry level’ cuvee Catavela coming from his lower parcels and his top tier Dinavolino coming from the vineyards with the highest elevation.
In the cellar Giulio experiments with different fermentation vessels, including stainless steel tanks, amphora and old oak. The length of maceration time for each wine depends entirely on the character of the season.
The wines are bottled unfined, unfiltered and with extremely minimal additions of sulphites, if any at all.
