Region: Baden, Germany

Vintage: 2022

Viticulture: Organic and biodynamic methods (not certified). Grapes picked in Baden and transported to Volnay in a refrigerated truck. 

Soils: Schists

Vinification: Grapes were chilled overnight, crushed, pressed with a basket press for 2-3 hours, decanted (with the lees kept separately for future use if needed), ambient yeast fermentation.

Aging: 18-24 months in used 228L and 600L barrels, racked and blended in tank for 2 weeks

Fining or Filtering: no fining or filtration

Sulfur: SO2 only added before bottling (approx. 10-20 ppm)

Notes from the Importer: Bastian Wolber is known to be a prodigy in winemaking. While working with Ganevat, he injured himself falling off a skateboard, which led him to head back to his family's estate in Germany. He started there his own negociant project Laisse Tomber, which means "Let it be" more playful on words "Let it fall", an ode to his epic skating biff. He sources fruit across Europe, from Baden, to Savoie, Alsace and Burgundy. He moved to Burgundy and joined Jean-Yves Bizot's team while keeping his project to express his full creativity.
