Soils: Limestone and clay-limestone

Vinification: Hand-harvested 100% whole cluster. The grapes from the Mâconnais are picked 10 days before those from Ladoix and are placed in a tank to begin carbonic maceration. The grapes from Ladoix are picked and layered in alternating tiers between the already-fermenting Mâconnais grapes in a 55 HL wooden tank. 1-week ambient yeast fermentation and carbonic maceration. Minimal extraction by wetting the cap with buckets and 1 foot tread near the end of fermentation. Malolactic fermentation in tank.

Aging: Aged for 10-12 months in used barrels (228 L and/or 350 L)

Fining or Filtering: no fining, no filtration

Sulfur: SO2 only added before bottling (approx. 10 ppm)

Notes from the Importer: Bastian Wolber is known to be a prodigy in winemaking. While working with Ganevat, he injured himself falling off a skateboard, which led him to head back to his family's estate in Germany. He started there his own negociant project Laisse Tomber, which means "Let it be" more playful on words "Let it fall", an ode to his epic skating biff. He sources fruit across Europe, from Baden, to Savoie, Alsace and Burgundy. He moved to Burgundy and joined Jean-Yves Bizot's team while keeping his project to express his full creativity.
