Vinification: Whole cluster fermentation, indigenous yeasts, minimal punch-downs (by feet only) and pump-overs (with bucket).
Aging: 12 months in older barrels and 4 months in stainless steel tank. Elevage is done in both normal barrels and 350L. The 229L is fruit-forward with lovely red berries … while the mineral note is stronger in the 350L. A mix gives the wine more structure and mineral display.
Fining or Filtering: no fining or filtering
Sulfur: 20ppm
Notes from the Importer: Saisons is a negociant project created in 2019 by Loic Lamy and Eric Pignal. Definitely a high-end micro negoce project, inspired by their previous work experiences with Dujac, Roulot or Domaine de Montille. Eric got a new job as chief winemaker at Simon Bize, and this left Loïc to carry on alone. This is a small estate. In 2023, there were only 3000 bottles… not much for the world market.
